Here’s a recipe for Carrot Cake:
Ingredients:
- 2 cups Granulated Sugar
- 1 ½ cups Vegetable Oil
- 4 Fresh Whole Eggs
- 2 cups Pastry Flour
- 2 teaspoons Baking Soda
- 1 teaspoon Salt
- 2 teaspoons Ground Cinnamon
- 3 cups Ground Carrots (raw finely)
- 4 ounces Walnuts (finely chopped)
- 1 ½ pounds Powdered Sugar
- 12 ounces Room Temperature Cream Cheese
- 1 tablespoon Vanilla Extract
- 2 ounces Room Temperature Margarine1
Instructions:
- Preheat your oven to 350°F (175°C). Grease and flour a 9x13 inch pan1.
- In a large bowl, beat together eggs, oil, white sugar and 2 teaspoons vanilla1.
- Mix in flour, baking soda, baking powder, salt and cinnamon1.
- Stir in carrots1.
- Fold in pecans1.
- Pour into prepared pan1.
- Bake in the preheated oven for 40 to 50 minutes, or until a toothpick inserted into the center of the cake comes out clean1.
- Let cool in pan for 10 minutes, then turn out onto a wire rack and cool completely1.
To make the frosting:
- In a medium bowl, combine butter, cream cheese, confectioners’ sugar and 1 teaspoon vanilla1.
- Beat until the mixture is smooth and creamy1.
- Stir in chopped pecans1.
- Frost the cooled cake1.
