Carrot Cake Recipe


 Here’s a recipe for Carrot Cake:

Ingredients:

  1. 2 cups Granulated Sugar
  2. 1 ½ cups Vegetable Oil
  3. 4 Fresh Whole Eggs
  4. 2 cups Pastry Flour
  5. 2 teaspoons Baking Soda
  6. 1 teaspoon Salt
  7. 2 teaspoons Ground Cinnamon
  8. 3 cups Ground Carrots (raw finely)
  9. 4 ounces Walnuts (finely chopped)
  10. 1 ½ pounds Powdered Sugar
  11. 12 ounces Room Temperature Cream Cheese
  12. 1 tablespoon Vanilla Extract
  13. 2 ounces Room Temperature Margarine1

Instructions:

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9x13 inch pan1.
  2. In a large bowl, beat together eggs, oil, white sugar and 2 teaspoons vanilla1.
  3. Mix in flour, baking soda, baking powder, salt and cinnamon1.
  4. Stir in carrots1.
  5. Fold in pecans1.
  6. Pour into prepared pan1.
  7. Bake in the preheated oven for 40 to 50 minutes, or until a toothpick inserted into the center of the cake comes out clean1.
  8. Let cool in pan for 10 minutes, then turn out onto a wire rack and cool completely1.

To make the frosting:

  1. In a medium bowl, combine butter, cream cheese, confectioners’ sugar and 1 teaspoon vanilla1.
  2. Beat until the mixture is smooth and creamy1.
  3. Stir in chopped pecans1.
  4. Frost the cooled cake1.
